Yes, it’s a sloppy picture. For that I am Sorry. But holy cow it was delicious! This meal was about 230-250 calories per serving (depending on your greediness with cheese). Initially it was suppose to be a meat free meal but who the hell likes that?? I added grounded turkey meat to make it enjoyable for us meat eaters but feel free to cook without the meat :).
4 1/2 ounces chopped spinach (or more if you want)
6 2/3 ounces nonfat ricotta cheese
1/4 cups grated low fat parmesan cheese
Low fat Mozzarella cheese
1 jar of your favorite sauce (spaghetti or marinara sauce)
1.5 lbs of ground turkey meat (optional)
Boil your lasagna noodles so they are easier to lay out in the baking dish. While those are boiling, brown your ground turkey and add in the mushrooms, salt, pepper, Italian seasoning & sauce.
Mix together your ricotta cheese, parmesan, and egg in a bowl.
In the baking dish, lay your first row of lasagna noodles. Spread the ricotta mix first then add the meat & sauce, then top with more parmesan and mozzarella cheese. Lay your next layer (opposite direction to the last layer if you want) and repeat the steps. The Last layer, you can spread the ricotta mix, then add the spinach on top. Add one more row of noodles on top of the spinach. If you have any left over sauce or ricotta, you can add as a final topper with cheese as well.
Place into the oven at 375 and cook for 25-30 minutes or until done.
