Slow Cooker Chicken Chili With Hominy

I scrolled through the ‘Yummly’ app for a good half hour while standing in the grocery store holding an empty basket. I was feeling something easy to throw together and I came across this.


Serves 4

2 lbs boneless chicken breast
1 onion
3 cloves garlic
1 cans white hominy
1 cans diced tomatoes
1 cans tomatillos
1 cans mild green chiles


Cut the chicken into small 1inch by 1 inch cubes. Dice up the onion and garlic. Add everything together in the slow cooker and mix. Cook on high for 4 or 4 1/2 hours or on low for 8 hours. Serve in a bowl and top with pepper and fresh parsley.
