Slow Cooker Spicy Beef Tortellini Soup

Ingredients:
Serves 6
280 Calories

1 lbs beef stew meat
2 cups marinara sauce
3 cups vegetable broth
29 ozs diced tomatoes
1 tsp Italian seasoning
8 ozs noodles
2 tbs heavy cream
Grated parmesan cheese

Directions:

Add into the slow cooker the meat, spaghetti/marinara sauce, tomatoes, broth, and seasoning. Cover and cook for 7-9 hours on low and occasionally stir. For the last 20-30 minutes of cook time, add the tortellini pasta and turn to high. Add the heavy cream to cut the acidity down but totally optional. Serve with parmesan cheese and diced parsley.

  1. Nice! I don’t usually cream to tomato based sauce but I can imagine that it gives it a very luxurious rich flavour.
